Ying Yang Banana Bread (V, Gf)

Banana bread will always be on of the greatest baked goodsโ€ฆ but split it in half, make one side chocolate and one side regular, layer in between some dates and peanut butter (or any jam/dried fruit and nut butter) and you create one epic loaf of banana bread with all the flavors complimenting each other! Hereโ€™s how you can do it!

Vegan Banana Bread Sandwich

Makes 1 loaf

Wet Ingredients

  • 2 mashed bananas (I used 4 apple bananas that we harvested but it equates to 2 regular bananas!)

  • 1/2 cup nut/seed butter (I used @btequator !)

  • 2 flax eggs (2 tbs flax mixed with 6 tbs water)

  • 1 teaspoon acv

  • 1 teaspoon vanilla

  • 1/4 cup + 2 tablespoons maple syrup

  • 1/4 cup non dairy milk

Dry ingredients:

  • 1 teaspoon baking soda (or 1/2 tablespoon baking powder, but soda makes it fluffier!)

  • 1/4 teaspoon salt

  • 1/2 tablespoon cinnamon

  • 1/2 teaspoon nutmeg

  • 2 cups oat flour

  • 1/3 cup almond (or coconut) flour

  • 1/2 cup chocolate chips

  • for the chocolate bread!! Add in 2 tablespoons cacao powder and an extra 2 tablespoons of maple syrup (and if needed, an extra tablespoon of non dairy milk; you can also double these measurements and make the whole loaf chocolate, or omit them and make the whole loaf regular)

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit. Line 1 or 2 bread pans with parchment paper (1 if you only want 1 flavor or 2 if you are splitting the batter for both flavors)

  2. Mix all the wet ingredients together.

  3. Add in the dry ingredients (except the cacao powder) and mix until all incorporated.

  4. Pour half the batter into one of the pans and add in the cacao and extra maple syrup to the remaining half and pour that into a different bread pan (or make the batter all one flavor or the other and bakes as one loaf, or make two separate flavors and swirl into one bread pan for a swirly loaf, haha sorry for the many alternatives, feel free to be creative!)

  5. Bake for around 20 minutes (or around 30 minutes if you are making one regular sized loaf), until nice and golden.

  6. Let cool then layer dates and peanut butter, or any fillings of you choice (i.e. jams, jellies, dried fruit and nut butter, and nut or seed butter, chocolate chips, etc, just make sure at least one is sticky enough to hole the breads together) and sandwich it between the breads! If you made one load feel free to slice it in half long ways and stuff it or to just top the loaf with anything! Enjoy!
