Vegan Snickers Caramel Slice
These will always be my favorite sweet treat to make! The perfect dessert or snack, paired perfectly with a latte (which I say for everything haha) this date caramel bar is filled with nut butter and chocolate all on top of an oat crust that creates a delightful bite!
Vegan Snickers Caramel Slice
Makes 6 servings
Crust ingredients:
1 cup oat flour
1/2 teaspoon cinnamon
1/4 cup maple syrup
1-2 tablespoons non dairy milk
a pinch sea salt
Caramel ingredients:
1 heaping cup pitted and soaked medjool dates
1/4 cup nut/seed butter
1/4 cup non dairy milk
Topping ingredients:
1/2 cup chocolate chips
Directions:
In a small bowl, add in all the base ingredients and mix until a dough is formed, it should hold together when pressed but not be too mushy (add in more oat flour or non dairy milk if needed)
Press the crust evenly into the bottom of a lined pan (I usually use three mini bread pans but any will do!)
In a food processor add in the dates, nut butter, and nondairy milk. Blend until smooth.
Add the caramel layer on top of the crust, place in the freezer or fridge.
Melt the chocolate chips (I used a stainless steel bowl over a pot of water to make a double broiler, but a microwave works, just make sure not to burn it!).
Remove the slices from the freezer/fridge, evenly spread the melted chocolate on top, place back in the freezer/fridge for a few hours.
Cut the bars using a warm knife (heat it under hot water) and enjoy!
