Vegan Mango Muffins (Gf)
The simple way to make a banana muffin recipe into these tropical mango muffins! Sweet, simple, and full of sunshine!
Mango Muffins
Makes 12 muffins
Wet ingredients:
1 cup mango puree (or 2 mashed bananas to just make banana bread, or 1/2 cup mango and 1 banana for a mix!)
1/2 cup maple syrup
1/4 cup nut butter
1/4 cup non dairy milk
Dry ingredients:
1 cup oat flour
1/4 cup almond or coconut flour (or all oat flour)
1/4 cup rolled oats
1/2 tablespoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
optional 1-2 lilikoi
Directions:
Preheat the oven to 375 degrees Fahrenheit.
Mix together the wet ingredients, then add in the dry ingredients and mix until all incorporated.
Pour into either a lined/oiled muffin pan or a silicon muffin pan.
Bake for 15-20 minutes until nice and golden, let cool before removing from the pan, then enjoy this tropical treat!
