No Bake Vegan Samoas (Caramel Delights)

We all know this classic coconut and caramel Girl Scout cookie, but these chocolate dipped and drizzled no bake, vegan version of this caramel treat are definitely the way to go!

Vegan Samoas

Makes 8 servings

Ingredients:

  • 2 cups coconut clusters (or granola, we had sweetened coconut and seed clusters from Costco that needed to be used up as well as coconut granola clusters so I used a mix of those but any will do!)

  • 1/4 cup nut or seed butter (I used @btequator , discount code FRUITYLIFE )

  • 3 pitted medjool dates

  • 1-3 tablespoons of plant milk (just to help it blend)

  • 1/2 cup chocolate chips

  • optional vegan caramel

Directions:

  1. Add everything to a food processor and blend until all combined.

  2. Press evenly into a parchment lined bread pan (or a donut pan for a larger treat with the same classic shape of a samoa) and freeze over night

  3. Once frozen you can melt chocolate chips and slice the bars (using a knife heated under warm water), then dip the bottoms in the chocolate, place them on parchment paper or a silicone mat, and drizzle some vegan caramel (@humyumcaramels is what I used!) and chocolate over top too, place in the fridge to let the chocolate set, then enjoy!
