Healthy Baked Vegan Fish! (Gf)
There are a few vegan fish alternatives you can buy, but most have crazy ingredients… these are simple to make, good for ya, and satisfy the taste for fish!
Vegan Baked Fish
Makes 6-10 fish bites
Fish ingredients:
1 can of heart of palm (or artichoke hearts)
1 tablespoon vegan fish sauce (or soy sauce/other alternatives)
1 teaspoon kelp/dulse flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chickpea flour
Bread batter ingredients:
1/2 cup chickpea flour
salt and pepper to taste
1 teaspoon kelp/dulse flakes
optional 1 teaspoon roasted sesame seeds (ground if possible)
1 tablespoon nutritional yeast
1/4 cup + 1-2 tablespoons water
Directions:
Preheat the oven to 375 degrees Fahrenheit, line baking sheet with parchment of a silicon baking mat.
Add all the ingredients to a food processor and pulse until the heart of palm is in small pieces, you can pulse until they are your desired texture.
Roll into balls (you can either make these bite seed or patty sized) then flatten them out on the baking sheet.
Bake for 15-20 minutes until nice and golden, then remove them from the oven and let cool (take the parchment/silicon mat with the fish on it off of the hot baking sheet and put on the counter to cool quicker.)
Make the batter by mixing everything together, then dip each fish piece in the batter (use a fork to help), then place back on the baking sheet.
Once they are all lightly coated, bake for another 10 minutes until golden.
Let cool and enjoy! These made great vegan fish and biscuit sandwiches!
