Caramel Apple Muffins (V, Gf)

Muffins are by far the best baked good, but add in some fresh apple (I prefer using red apples!) and some sweet caramel an you just combined an epic snack into a baked good! Here’s how to make these fluffy, sweet, and spicy muffins!

Caramel Apple Muffins

Makes 10 muffins

Ingredients:

  • 2 flax eggs

  • 1 teaspoon apple cider vinegar

  • 1/2 cup maple syrup

  • 3 tablespoons nut/seed butter

  • 1 grated apple

  • 2 teaspoons @the_ginger_people ginger spread (or a teaspoon ginger powder)

  • 1 1/2 cup oat flour

  • 1/2 cup almond flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 tablespoon cinnamon

  • 1/2 teaspoon nutmeg

  • Vegan caramel and apple candies (@humyumcaramels and @torieandhoward are what I used, or you can sub for chopped medjool dates for a similar sweetness)

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit.

  2. In a large bowl, mix together the wet ingredients.

  3. Then add in the dry ingredients (minus the caramel and apple candies, but if you are using chopped dates you can mix those in too)

  4. Pour the batter into oiled/lined/silicone muffin tins, but only fill them half way. Place an apple candy and/or vegan caramel (I like both together!).

  5. Bake for about 20 minutes, until nice and golden, then let cool and enjoy!
