Apple Pie Bars (V, Gf)

Apple pie is a tradition in my house, but apple crumb is one of my favorites, so I decided to combine the two into this quick and comforting treat!

Apple Pie Bars

Makes 6 bars

Crust ingredients:

  • ½ cup almond flour

  • ½ cup spelt flour

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • 1 teaspoon cinnamon or pumpkin spice

  • 2 tablespoons cashew butter

  • 3 tablespoons maple syrup

Filling ingredients:

  • 2 sliced apples

  • 1/2 tablespoon cinnamon

  • 1 tablespoon water

Crumble ingredients:

  • ½ cup oats

  • 3 tablespoons seed butter

  • 1 tablespoon coconut sugar (or brown sugar)


Directions:

  1. Mix all the crust ingredients together then press evenly into the bottom of a parchment lined bread pan.

  2. Cook the filling ingredients in a pot on the stove until soft then layer over top of the crust.

  3. Mix the crumble ingredients together (it might be easiest using your hands), then sprinkle the crumble over top of the apples and lightly press them down.

  4. Bake at 375 degrees Fahrenheit for 15-20 minutes, until golden on top. Let cool before slicing then enjoy!
