Fluffy Maple Cornbread (V, Gf)
Sometimes we just need some fluffy, slightly sweet and salty cornbread that is easy to make. Delicious on its own, paired with chili, or some other cozy dish (it also makes great avocado toast)!
Vegan Maple Cornbread
Makes 4-6 servings
Wet ingredients:
2 flax eggs
1/4 cup tahini
1/4 cup + 2 tablespoons maple syrup
1 teaspoon apple cider vinegar
1/2 cup nondairy milk
Dry ingredients:
1 1/4 cup oat flour
1 cup corn meal
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon turmeric
For the top:
1 tablespoon maple syrup
1/4 cup seeds (or chopped walnuts)
a sprinkle of salt (if the seeds arenβt salted)
Directions:
Preheat the oven to 375 degrees Fahrenheit and line a bread pan with parchment paper.
In a large bowl, mix together the wet ingredients.
To the same bowl, add the dry ingredients and mix until all incorporated.
Pour into the parchment lined bread pan, drizzle over some maple syrup and some salted seeds (I used @go_raw sprouted seeds!)
Bake for around 20 minutes (until golden and a toothpick can be removed mostly clean), let cool, then slice and enjoy!
