No Bake Snickerdoodle Cookie Cups (With fruit jam filling!)
I have been loving no bake recipes for these warmer months, and this no bake snickerdoodle cookie is the perfect cinnamon treat that you can just roll into cookie dough bites or fill with a refreshing fruit jam!
Makes 6 stuffed cookie cups
Snickerdoodle Ingredients:
1/4 cup melted coconut butter (or any nuetral nut/seed butter)
1/4 cup maple syrup
1 teaspoon vanilla
1 cup oat flour
1 teaspoon cinnamon
a pinch of sea salt
Mango/Fruit Jam Ingredients:
1 cup fresh or frozen fruit
1 tablespoon maple syrup/agave
1 tablespoon chia seeds
Directions:
Mix all of the cookie dough ingredients together, it should all hold together but not be too sticky, add more maple or oat flour as needed to get this consistency.
For the jam, add the fruit and maple syrup to a pot on the stove over medium heat, bring to a simmer and let cook for around 5 minutes until it is all cooked and some liquid has evaporated.
Place the cooked fruit into a blender and blend until smooth. Mix in the chia seeds and let set for at least 10 minutes. If you can, let it cool in the fridge.
You can eat the cookie dough by itself, with jam drizzled over top, or you can assemble the cookie dough cups.
To assemble, press some cookie dough into a lined or silicone muffin tin (or you could make bars by pressing half the dough into the bottom of a parchment lined loaf pan), then layer in some jam, and crumble the remaining cookie dough over top and lightly press it into the jam. Let set in the fridge or freezer, the remove from the tins and enjoy!
