Ginger Banana Cake (V, Gf)

A spiced up version of the classic banana bread, this gluten free and vegan treat is super fluffy and soft with a nice light ginger kick and chocolate chips!

Vegan Ginger Banana Cake

Makes 6-8 slices

Wet Ingredients:

  • 2 large mashed ripe bananas

  • 1 teaspoon vanilla

  • 1 tablespoon molasses

  • 1/4 cup maple syrup or agave

  • 1/2 cup nondairy milk

  • 1 tablespoon ginger spread (I used The Ginger People but you can also substitute for 1 teaspoon ginger powder)

Dry Ingredients:

  • 3/4 cup coconut or almond flour

  • 1 cup oat flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 tablespoon cinnamon

  • 1/4 cup chocolate chips

  • optional 1/4 cup candied ginger (also from The Ginger People)

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit and line a loaf pan with parchment paper.

  2. In a bowl, mix together the wet ingredients then add in the dry ingredients and mix until all combined.

  3. Pour into the loaf pan and bake for around 15 minutes, until nice and golden and a toothpick can be removed mostly clean.

  4. Let cool completely before slicing, then enjoy!
