Vegan Chocolate Chips Scones
Everyone needs a good scone recipe, and this one is the perfect easy, vegan scone filled with chocolate chips and sweetened with coconut sugar! Whip these up, grab a cup of coffee, and you’re set!
I tried making these with all whole wheat flour and they turned out too fluffy for a scone, so I highly recommend using both whole wheat or all purpose flour as well as almond or coconut flour!
Vegan Chocolate Chip Scones
Makes 6 scones
Dry Ingredients:
3/4 cup whole wheat flour
1/4 cup almond flour
2 tablespoons coconut sugar
1/2 teaspoon baking powder
a pinch of salt
Wet Ingredients:
1 teaspoon vanilla
1/4 cup nondairy milk
3-4 tablespoons frozen coconut oil
Directions:
Preheat the oven to 375 degrees Fahrenheit and line a baking tray with parchment or a silicone baking mat.
In a bowl, mix together the dry ingredients.
To the same bowl, add in the vanilla and non dairy milk, don’t mix quite yet. Using a grater, grate in the frozen coconut oil so that there are coconut oil flakes. Mix everything together until just combined, you might have to use your hands, but try to not over mix the flour and not melt the coconut oil.
Once mixed, shape the dough on the parchment/silicone mat into a large disc and slice into 6 scones. Spread them out on the tray and bake for around 20-25 minutes, until nice and golden and lightly crisp (they also crisp as they cool!).
Let cool before enjoying! Store on the counter in an air tight container for up to 3 days or freeze and pop in the toaster oven when you want one!
