Peanut Sauce Soba Noodle Salad Bowl

A recreation of one of my favorite dishes from a vegan cafe on island, this peanut sauce soba noodle salad bowl is the perfect, refreshing, creamy, and nourishing meal that you have to make!

Peanut Sauce

Makes enough sauce for 5-6 people

Ingredients:

  • 1/2 cup peanut butter (I used homemade roasted pb!)

  • 1/2 cup tahini (or all pb/you could also do all or part almond butter)

  • 1/4 cup liquid aminos (@bragglivefoodproducts )

  • 1/2 a lime juice

  • 2-4 tablespoons maple syrup (depending on sweet preference)

  • 1 clove raw garlic

  • 1 tablespoon raw ginger

  • pepper to taste (I also added a little @pickldit chili seasoning!)

  • 1/4-1/2 cup water (start with 1/4 cup and add a little more as needed to get your desired creaminess!)

Directions:

  1. Add everything to a blender and blend until smooth, thatโ€™s it!

  2. I served this with buckwheat soba noodles, locally made split pea tempeh sautรฉed with kale and turmeric we grew, pepper, and liquid aminos, as well as local tomatoes, all over top a bed of mixed greens, carrots, and beets that we harvested! This also make a great peanut dipping sauce for sushi rolls, spring rolls, and roasted sweet potatoes!
