Easy Hot Pocket! (V, Gf)

If you grew up eating as many hot pockets and pizza pockets as I did, then this is the perfect recipe for you! A vegan and gluten free twist, simple to make and customizable. Now you can make your own at home!

Vegan & Gf Hot Pocket

Makes 1 serving

Crust ingredients:

  • 1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water)

  • 3/4 cup oat flour

  • 1 teaspoon arrowroot powder (or an additional teaspoon of flour)

  • 1 tablespoon nutritional yeast

  • salt and pepper to taste

  • 1/4 teaspoon turmeric (optional)

  • 1/4 teaspoon dried oregano

  • 1 tablespoon water

For the filling (choose 2-4):

  • tomatoes or tomato sauce

  • vegan cheese

  • cashew cheese

  • avocado

  • spinach

  • basil

  • mushrooms

  • chickpeas

  • roasted garlic

You can use whatever you have/whatever sounds good!

I used avocado, tomatoes, fresh basil, and roasted garlic.

You could also make it a breakfast tofu scramble type of pocket!

Directions:

  1. Mix all the crust ingredients together. Let the dough sit for 2-3 minutes, then split it into two and roll/press each into a thin rectangle shape (do this on top of parchment paper).

  2. Add the fillings you choose on to one side.

  3. Place the second crust over the top of the fillings and use a fork to close the sides together.

  4. Bake at 375 degrees Fahrenheit (in an oven or toaster oven) for 15 minutes. Enjoy!!
