The Best Healthy Sugar Cookies!! (V, Gf)

So you know those sugar cookies you buy fro the store in the freezer section that are sooo good and always a sign that the holidays are coming/here!? Well these are them but the vegan, oil free, and gluten free version that are simple and good for ya!

*side note!! The first photo was from my first attempt when I didn’t use a flax egg and the texture was a bit off and they were veryyy fragile, so I added the flax egg and they were perfect! The second photo is the inside shot from the successful batch/what this recipe is for but I had to include the first photo since it was pretty haha!

Simple Sugar Cookies

Makes 12 cookies

Wet ingredients:

  • 2 flax eggs (the key ingredient the first batch didn’t have! Mix 2 tablespoon ground flax with 4 tablespoons water and set aside to thicken)

  • 3 tablespoons maple syrup

  • 1 teaspoon vanilla

  • 1/4 cup melted coconut butter (melted, can also sub for drizzly almond butter or melted coconut oil)

  • 3-4 tablespoons nondairy milk

  • 1 cup rice flour

  • 1 cup almond flour

  • 1/2 cup sugar (I used organic cane sugar to keep the classic color and taste)

  • 2 tablespoons arrowroot (or corn/tapioca starch, this helps make them chewy and not dry)

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • a pinch of salt

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit and line 2 cookie sheets with parchment or silicone baking mats.

  2. In a large bowl, mix the wet ingredients (make sure the coconut butter is melted/soft and that the other ingredients are not cold so that it doesn’t solidify the coconut butter; you can also add the wet ingredients to a microwave safe bowl and heat for 15-30 seconds so that they mix easily!).

  3. Add in the dry ingredients and mix until a cookie dough is formed.

  4. Roll into a dozen cookies and flatten them slightly on the cookie sheet (they spread a little but not too much).

  5. Bake for around 12 minutes (check after 10 minutes) until they are lightly golden, let cool a little to set and then enjoy!
