Healthy Chocolate Lava Cake (V, Gf)
There’s never too much chocolate, especially when it comes to this chocolate filled chocolate cake! Decadent and delicious, made from good for ya ingredients and epic if you top it with some vegan ice cream (I used mint chip ice cream which is the perfect refreshing duo!)
Healthy Chocolate Lava Cake
Makes 2-3 servings
Wet ingredients:
2 tablespoons nut butter
1/4 cup maple syrup (or any liquid sweetener)
2 tablespoons nondairy milk
Dry ingredients:
1/2 cup oat flour
2 tablespoons almond flour
2 tablespoons cacao powder
1/2 tablespoon ground flax or chia seeds
1/2 teaspoon baking powder
a pinch of salt
Directions:
Preheat the oven to 400 degrees Fahrenheit and oil a baking ramekin (this makes 1 ramekin depending on the size, mine is an oval that is about 5 inches long, or 2-3 individual muffins).
In a mixing bowl, mix all the wet ingredients together then add in the dry ingredients and mix again.
Pour half of the batter into the bottom of the ramekin/muffins, then fill the middle with a big spoonful of chocolate chips or a couple squares of chocolate, then pour the remaining batter over top and spread it evenly (the batter should be kind of thick, similar to brownie batter).
Bake for around 12-15 minutes, then let cool for a few minutes before eating, top with your toppings of choice and enjoy!! These are best served fresh so that the inside is still nice and melty! Otherwise you can reheat them to melt the chocolate again but the cake may be slightly drier (but still delicious!).
