Cinnamon Apple Crumb Cake (V, Gf)

Crumb cake, coffee cake, whatever you choose to call it, this sweet, fruity, and nutty cake is just perfect with a latte and a book!

I used star apple for this cake (which tastes like a huge tropical blueberry!) but you can use apple, blueberries, or both!

Cinnamon Apple Crumb Cake

Make 6 servings

Wet ingredients:

  • 1 flax egg

  • 1 teaspoon apple cider vinegar

  • 1/3 cup seed butter (or any nut butter, I used @btequator discount code FRUITYLIFE)

  • 1/3 cup + 2 tablespoons maple syrup

  • 1/3 cup + 1 tablespoon nondairy milk

Dry ingredients:

  • 1 1/2 cup oat flour

  • 1/2 cup almond flour (or all oat flour)

  • 1 teaspoon baking powder

  • a pinch sea salt

  • 1 tablespoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 diced apple (or 1/2 cup blueberries, fresh or frozen)

For the crumb topping:

  • 3/4 cup oats

  • 1 tablespoon seed butter (or any nut butter)

  • 2 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1 tablespoon almond flour

  • 1/4 cup chocolate chips

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit, oil a cake pan or use a silicone cake pan.

  2. In a large bowl, mix the wet ingredients together.

  3. Add in the dry ingredients, then pour into the cake pan.

  4. In a small bowl, mix the crumb ingredients together (you might have to use your hands), then crumble it over top of the cake and lightly press it into the batter.

  5. Bake for 20-25 minutes, until nice and golden, let cool, then slice and enjoy!
