No-Bake Peanut Butter Cup Cookies (V, Gf)

These cookies classify as dreamy! Nutty, chocolatey cookies with gooey date pieces, so good you can just eat the dough! Not to mention they are simple, quick to make, and have the perfect peanut cookie texture!

No-bake Pb Cookies

Makes 4-8 cookies

Ingredients:

  • 1 cup oat flour

  • 1/4-1/2 cup chopped medjool dates

  • 1/2 cup peanut butter (or any nut butter, I used homemade roasted peanut butter)

  • 1-2 tablespoons maple syrup

  • 1 tablespoon nondairy milk, if needed (I used homemade almond milk)

  • 1/2 cup melted chocolate chips

Directions:

  1. Add everything, except the melted chocolate, to a bowl and mix until all combined, if it is too dry to sticky together (this will depend on your nut butter!) then add in nondairy milk (or more maple syrup) 1 tablespoon at a time until the dough holds (it shouldn’t be too sticky).

  2. Roll into cookie dough balls, then use a fork to flatten them and make the traditional criss cross on a peanut butter cookie!

  3. Melt the chocolate chips and drizzle it over the cookies. Optional, but recommended to bring out the flavors, sprinkle some sea salt over top!

  4. Then enjoy! Save the remaining ones in the fridge or freezer and let the chocolate set.
