Magic Bread {Harry Potter Inspired Pumpkin Caramel Bread!} (V, Gf)
The best movie ever, made into a cozy and epic loaf! Sweet, cinnamon, and butterbeer essence all in this fluffy loaf. Pop this in the oven, play a Harry Potter movie of your choice (extra points if you read the book instead;) and prepare for one unbeatable duo!
Pumpkin= pumpkin pasties ( a classic)
Cinnamon= reminiscent of Gryffindor
Chocolate= chocolate frogs
Caramel= butterbeer!!
Marshmallows (specifically pumpkin ones)= Fall festivities (who else agrees the movies remind them a cozy winter and fall)
Magic Bread
Makes 8 servings
Wet ingredients:
1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water, let sit for 5 minutes)
1/2 cup pumpkin purΓ©e
1/2 cup maple syrup
1/4 cup almond butter
1 teaspoon vanilla extract
Dry ingredients:
1 1/3 cup oat flour
1/3 cup almond flour
1 tablespoon cinnamon
1/2 tablespoon baking powder
a pinch sea salt
Toppings:
chopped vegan white (or regular) chocolate (I used IChoc but my favorite regular vegan chocolate is @enjoylifefoods)
vegan marshmallows (mine happened to be pumpkin @mydandies)
vegan caramel (@humyumcaramels)
Directions:
Preheat the oven to 375 degrees Fahrenheit and line a bread pan with parchment paper.
In a large bowl, mix together the wet ingredients.
Then add in the dry ingredients (you can also add chocolate chips into the batter). Once all incorporated, pour into the lined bread pan.
Sprinkle over top the chopped chocolate, marshmallows, and drizzle over some caramel (you could also sub the caramel for chopped medjool dates).
Bake for around 25 minutes (until nice and golden), then let cool, and slice!
